Shafout is a traditional Yemeni dish usually served as a refreshing starter before heavier main courses like saltah or fahsa. It's built on lahoh bread (also called «malooj»), a thin, spongy fermented flatbread cooked on one side only, similar to Ethiopian injera.
This soft bread is soaked in a cold yogurt sauce flavored with garlic, mint, and green chili, giving shafout a refreshing tang that balances the bold spices found elsewhere in a Yemeni meal.
