Saltah is Yemen's national dish, typically eaten for lunch. Its signature is the frothy top layer of whipped fenugreek («hulbah») sitting over a spicy meat broth called «maraq» or «fahsa», plus a fiery tomato-and-chili relish called zahawiq.

Traditionally saltah is served in a hot stone pot so it's still sizzling when it reaches the table, and is scooped up directly with fresh Yemeni flatbread rather than a spoon.
