Cook the onion and garlic in a pan with a little oil until softened.
Add the ground meat and cook until fully browned.
Add the curry powder, turmeric and cinnamon, and stir well to release the spice flavours.
Squeeze the soaked bread slices of excess milk (reserve the milk) and crumble them into the meat.
Add the raisins, chopped apricots, vinegar and apricot jam, and stir well.
Season with salt and pepper, and cook for 5-7 minutes until the mixture comes together.
Transfer the meat mixture to a greased baking dish, spreading it evenly and pressing the surface lightly.
Beat the eggs with the reserved milk and a pinch of turmeric, then pour it over the meat layer.
Garnish the surface with bay leaves.
Bake in a preheated oven at 180°C for 30-35 minutes until the egg topping sets and turns golden.
Serve with yellow turmeric rice.

Do not substitute real bay leaves for anything else — they are essential to the dish's visual and aromatic identity. The meat mixture can be prepared ahead and refrigerated before adding the egg topping and baking.
