Ghormeh sabzi is widely regarded as Iran's national dish. It relies on a mix of finely chopped fresh herbs — cilantro, parsley, leeks, and fenugreek — sautéed for a long time until they lose their moisture and darken to a deep green.

Dried black limes (limoo amani) are added for the dish's signature tang, and it's simmered with red kidney beans and lamb until the sauce turns thick and richly bound together.
