Machboos is the signature rice dish of Kuwait and the wider Gulf. Its name comes from the verb «jabas», meaning to press or stack, referring to how the meat is layered over the rice as it cooks. It relies on a machboos spice blend rich in cinnamon, cardamom, cloves, and bay leaf.

Machboos differs from Saudi kabsa in its spice ratios and its use of both ground and whole dried black lime (loomi), giving it a distinctive tangy note that sets it apart from other Gulf rice dishes.
