Borek is one of the most storied dishes of Ottoman cuisine, and cigar borek is one of its most famous and popular forms in Turkey, served as an appetizer with tea at gatherings. It gets its name from its thin cylindrical shape resembling a rolled cigar.
Very thin yufka pastry (similar to phyllo) is used to wrap the filling, rolled tightly so it stays crispy outside and soft inside after frying. Soft white cheese with parsley is the most classic filling.
