Faloodeh is an ancient Persian dessert dating back more than 2,500 years, considered one of the oldest known frozen desserts in the world — ancient Persians stored ice in underground chambers called «yakhchal» to prepare it even in summer.
Faloodeh is made from very thin noodles of cornstarch or rice starch, soaked in a concentrated rose-water and sugar syrup, and served frozen with a squeeze of tart lime juice that balances the sweetness and adds a refreshing edge.
