Skip counting is a way of counting objects in fixed jumps instead of counting one by one — very useful for quickly counting large groups of things.

Counting by 2s: 2, 4, 6, 8, 10, 12... (add 2 each time). Counting by 5s: 5, 10, 15, 20, 25... (add 5 each time). Counting by 10s: 10, 20, 30, 40, 50... (add 10 each time).

Practical example: to count 20 fingers on four hands (5 fingers per hand), we can count by 5s: 5, 10, 15, 20 instead of counting one by one. Skip counting also paves the way for learning multiplication tables more easily later.
